Boutique Wine – Heathcote

The Duck flies on with it ’s Heathcote Shiraz displaying all the
grace and aplomb that we’ve come to applaud. Vibrant and
smooth with wonderful depth and balance, enjoy the velvety
notes of red plums and chocolate, with hints of exotic spice
and French oak. What a delight!

Vintage 2014
After a winter of moderate rainfall, Heathcote’s growing
season was mostly warm and dry. Frosts during flowering
kept yields below average. Extreme condition in January and
February required us to get our act into gear for picking a few
days earlier than usual. The grapes produced were vibrant and
fresh, and lip-smackingly moorish.

Winemaking
The winemaking philosophy is one that aims to allow the
fruit to have full expression with winemaking and oak inputs
playing a supporting role.
In 2014 the grapes were de-stemmed without crushing.
The grapes were allowed to macerate on skins for two days
prior to being inoculated with a selected strain of yeast. The
grapes were fermented on skins until dryness (approx. 9 days)
before pressing to a combination of mostly French and some
American oak barriques, of which 30% were new. The wine
was matured in barrel for 12 months prior to bottling.
